Honestly, until week 5, Mei really didn't think much at all of him. When he hung out with her and Yuyuko with that oddball 'haunting' scheme, she was kind of curious about him.

Later on, Sebastian told her that he could be trusted, and she did! Even with all the evidence pointing at him during Athena's murder, she wasn't really convinced he did it, as he seemed pretty on board with the 'screw the producers' plan.

She was pretty surprised when it was revealed that he was pretty much on a mission to save everyone at the castle along with their 'hosts'. With how much of a help he was during endgame, she's pretty happy the producers didn't manage to scapegoat him.
